With it being the start of a new week, I thought I’d make your day even brighter with this book giveaway: Devotions For A Healthier You by Katie Farrell.

Devotions For A Healthier You is a vibrant, creative read, full of scripture and de-lish recipes. With gorgeous photos, inspiring devotional encouragements, meal planning tips and recipes, this is a book that will find itself on your kitchen counter and nightstand. Katie is one of those people you instantly adore; the type you want to call for a beach run or baking sesh. I may see if she wants to join me in the kitchen to mix up a double batch of her killer Flourless Peanut Butter Chip Brownies. Her devotional style is down-to-earth and gracious. She has a heart to encourage readers toward Jesus and healthy living. Whether you are striving to eat better, or find yourself in a menu rut, this is the perfect book for you. It came at the perfect time, because I abhor menu planning and am constantly asking friends for new recipe ideas. Thanks Katie, for offering healthy dinner and dessert options for this sweet- loving gal. I may be obsessed with her Thai Chicken Salad and Chocolate Peanut Butter Protein Bar for One.

A former full-time registered nurse, Katie now teaches and encourages individuals through her website,, to put together simple and healthy meals with foods they love, using everyday ingredients. It focuses on clean eating, gluten-free and sugar-free recipes. Much of her passion in the kitchen was developed as a part of the healing process she went through while recovering from eating disorders.

  1. Oh I want to read it!! And bake yummies. My favorite healthy meal is salmon, brown rice and artichoke. Favorite healthy snack would have to be apple’s and peanut butter.

  2. Ohhh, I want to win this book! A favorite snack around here is homemade raw trail mix. I buy raw nuts (almonds, cashews, walnuts and a handful of macadamia) in the bulk section at Sprouts and organic raisins and mix together and then measure out 1/4 cup into snack size baggies for an easy to grab snack. For dinner, a healthy go to dinner for me is spaghetti… organic whole wheat noodles, trader joe’s organic vodka sauce with ground turkey and loaded with veggies: garlic, onion, celery, carrots (I like the trio package of celery, onions and carrots from trader joe’s), mushrooms, peppers and artichoke. Makes a lot, so it’s great to have as left overs the next day. 🙂 Oh and I use just a tiny bit of organic coconut oil saute up my veggies.

  3. Ahhh this would be amazing for my GF tummy:)
    My fave go-to meal right now is turkey meatballs from Costco (a-mazing), sautéed bag of shredded cabbage/brussels from TJs (fab) over GF noodles. Mmmm…I think I know what dinner is tonight:)
    Yummy snack for me is always a good ole string cheese and rice crackers from TJs.

  4. Wow. This is totally something that is right in line with my goals for 2015! Getting my family healthy! We love to eat frozen grapes in the summer. They’re like little Popsicle bites, only without all the sugar!

  5. Love this! Our favorite go to snack is hummus and veggies. Simple and delicious 🙂 a healthy meal we love to make is burrito bowls.

  6. This book would be such a blessing to me and my soon to be husband!! I would have to say one of my favorite treats would be slicing up a sweet potato and lightly brushing olive oil on top. Place it in the oven for 15-30 min (depending if you like it soft or crispy) and enjoy a couple slices/chips!..within moderation of course! 😉 This goes great with salmon and a salad if you would want to turn it into a meal! Hope you can enjoy this snack sometime as well!

  7. This book seems amazing and something so many of us need, balance of mind, body, and spirit! My current favorite healthy go to meal has to be lettuce wraps. And they are so gosh darn easy. Get some ground turkey, whatever veggies you want (we typically do mushrooms, carrots, onions, and zucchini, garlic), make a quick sauce with some soy sauce, sriracha, honey and bam! Done! Throw it all in some lettuce and call it done. The veggies cook so quickly, as does the turkey. Sometimes the brown rice we make takes longer…Thanks for this Bek!

  8. This book sounds amazing!! What a great idea. A go-to snack here is apples with almond butter! And a dinner fave is taco salad with ground turkey!

  9. My current healthy snack is roasted/salted seaweed. I know some people think its gross but if you like the idea of crunchy soy sauce in your mouth this is the treat for you. The best thing is a pack at Trader Joe’s cost .99 cents so you could buy one and try it and if you hate it you’re only out a $1.00.

  10. The book sounds amazing, I’m so curious about the gf choc pb protein bars! I just made this week a new spin on tacos… in a crockpot. Chicken breasts in the crockpot, add a jar of TJ’s peach salsa, cook for 2-3 hours on high, then shred with a fork add 1-2 cans of black beans and a bag of corn. Cook for another hour. So yummy and easy! We filled our corn tortillas and added a kale salad with mandarins, feta and sunflower seeds. I had to fight Raegan for the last serving of salad. Thanks Bekah for sharing this book!

  11. My favorite easy healthy meal is seasoned chicken breast. Quinua and asparagus.
    My favorite healthy snack is a green and fruit smoothie in the vitamix. Lots of kale.coconut water.oj. pineapple. Beets. So yummy
